Raspberry Beetroot Hummus Platter

1 medium raw beetroot
1/4 cup raspberries
1 cup raw sprouted chickpeas 
2 tablespoons tahini
1 tablespoon cold pressed olive oil
Juice of 1 large lemon
1 large clove garlic 
Himalayan salt to taste 


To Serve

1 avocado, sliced
1 red onion, sliced
1 cucumber, sliced
1 tomato, sliced
Saurekraut (optional)



To make the hummus, blend all hummus ingredients in a Vitamix blender until smooth, and transfer to a bowl. 

Arrange hummus and all other ingredients on a platter and serve.
