Sunniva Holt's Salted Caramel Cookie Dough Bliss Balls

As part of our nationwide September Plant Based Challenge, we asked entrepreneur, motivational speaker, healthy lifestyle guru and super mum Sunniva Holt to create a simple, easy and delicious plant based recipe perfect for the kids lunch boxes! The result? These incredibly easy and totally delicious Salted Caramel Cookie Dough Bliss Balls! 

Make a large batch and keep it in the freezer. Ready to pop into the kids lunch boxes, or for a quick snack on the go between meals.

Salted Caramel Cookie Dough Bliss Balls 
2 cups raw cashews
1/2  cup raw gluten free oats 
1/2 cup dates, soaked
2 tablespoons pure maple syrup 
1 tablespoon melted coconut oil 
2 teaspoons Maca
1/8 teaspoon Himalayan salt 
2 tablespoons cacao nibs 
Blend cashews until fine in food processor. Add oats and blend until fine. Add remaining ingredients except cacao nibs and blend until it forms a dough. Add cacao nibs & pulse till just mixed through. Roll into balls & refrigerate
