First up is plant based foodie and blogger Ella Farrugia of The Curious Avocado with these incredibly delicious Christmas Spiced Buckwheat Waffles, perfect for your Christmas Day brunch!

Christmas Spiced Buckwheat Waffles with Raw Chocolate Sauce
Serves 1, but quantities can easily be multiplied so you can feed the whole family.
1 ½ tablespoons Little Bird Organics Coconut Sugar
1 cup plant based milk of choice
1 teaspoon chia seeds
½ teaspoon cinnamon
¼ teaspoon ground ginger
small pinch nutmeg
Raw Chocolate Sauce
2 tablespoons maple syrup
3 tablespoons Little Bird Organics Raw Cacao Powder
3- 4 tablespoons almond milk
To make the chocolate sauce, combine the maple and cacao in a bowl, and mix. Gradually add the almond milk until the desired consistency is reached.
To make the waffles, add the buckwheat to a food processor or high speed blender and blend until it becomes a fine flour with no chunks.
Then add the coconut sugar, chia seeds, cinnamon, ginger and nutmeg and blend until combined.
Lastly add the plant milk and blend until it forms a smooth batter.
Leave the mixture in the blender for about 7 minutes to let the chia seeds soak, so the mixture thickens slightly.
Pour the mixture into a waffle maker and cook until it turns golden.
At this point the smell of cinnamon will fill the air and it will truly feel like Christmas!
All that’s left to do is top you buckwheat waffles with whatever toppings your heart desires.
