Hazelnut Mousse

Rich, chocolatey and good for you! This is a delicious way to get some goodness into you while treating yourself to dessert.
Hazelnuts contain vitamins, minerals, protein, fibre and healthy fats. They also contain phytochemicals, including proanthocyanidins, quercetin and kaempherol. These proanthocyanidins belong to a group called the flavonoids. Flavonoids may support brain health, improve circulation and reduce symptoms associated with allergies.
Avocado contains many nutrients that you need in your diet; it is full of healthy fats like oleic acid, which can actually help reduce cholesterol. Avocado contains more potassium than bananas, something that is essential for muscle growth and organ function. Avocados also contain vitamins C and E, antioxidants that keep the immune system strong and your skin beautiful.
Ingredients
For the hazelnut milk:
1 cup activated hazelnuts
3 cups water
Hazelnut Chocolate Mousse
2 avocados
1/2 cup almond butter
1 cup hazelnut milk
3/4 cup cacao powder
1/2 cup agave nectar
Pinch vanilla
Pinch of salt
Method
Place hazelnuts and water in blender. Blend well. Strain through nut milk bag.
To prepare the mousse, place all ingredients in food processor. Process until very smooth. Refrigerate before serving (will not achieve the required taste until well chilled). Top with grated hazelnuts or trail mix if desired.
