This tart is filled with all the rich chocolatey and coffee flavours you want in an espresso tart, but with a lovely light mousse-like texture that makes it feel a little less indulgent, due to the use of avocado. If you haven’t made an avocado based dessert before, you will be shocked at how well they work as the main body of a tart, ice cream or mousse.
I love throwing together a bright bowl of veges, protein and healthy fats for a quick and simple lunch. I’ll often have a few bits and pieces prepped in the fridge, such as some tempeh and quinoa, then chuck in whatever veges I’ve got lying around. I’ve suggested a set of vegetables in the recipe here, but feel free to mix it up with whatever you’ve got in the kitchen...
Socca flatbreads are a traditionally flat bread served in Nice, France. They are naturally gluten-free and packed with protein, plus they are really easy to make.
Broths are such healing food. They’re light and easy to digest; you can make them with all sorts of vegetables but my favourite ones use a base of mushrooms and sea vegetables. Both of these ingredients have wonderful healing properties that boost the immune system and offer a deep savoury/umami flavour.
This is the perfect green smoothie. Drink one mid-morning or as an afternoon pick me up; it’s incredibly refreshing with the mint and cucumber, and nourishing with good fats from avocado and coconut which leave you satiated. The matcha will give you a little boost of energy and mental clarity.
These incredible looking chocolates are made from wholefoods so they don’t contain any highly refined sugar or other questionable ingredients. You can feel good about sitting down to one in the evening, and because they are so rich and decadent you will be satisfied with just one!
Most commercial coconut yoghurt available is made from the same coconut cream that you buy in a tin! This can never be called a raw yoghurt as the coconut is pasteurized. The tins are also lined with thin plastics which can leach into your food along with metals from the tin itself.
