Chickpea Hummus
Hummus is a wonderfully nutritious food, being incredibly rich in protein, vitamins and minerals. Pair it with our new Activated Dukkah Crackers for a delicious protein packed snack.
Ingredients
3½ cups cooked or canned chickpeas
¾ cup chickpea cooking water or chickpea tin water
3 tbsp tahini
½ cup cold-pressed olive oil
½ lemon, peeled ¼ cup lemon juice
2 cloves garlic, peeled and crushed
1 tsp sea salt
1 tsp cumin powder
To serve (optional)
1 tsp cold-pressed olive oil
½ tsp paprika
Method
If cooking your chickpeas, rinse and drain chickpeas well, place in a saucepan and cover generously with water. Bring to the boil over a medium to high heat, then reduce the heat, cover with a lid and allow to simmer for 1 hour or until tender. Drain, saving the liquid.
Place cooked chickpeas in a food processor with remaining ingredients. Process well until smooth and creamy, adding any additional salt, lemon or tahini to taste.
For a little extra flavour, you can serve with a drizzle of olive oil and a sprinkle of paprika.
This will keep in a glass jar in the fridge for up to 1 week (I find it keeps better in glass rather than plastic).
